RECIPE OF THE WEEK || Taco Salad Lunch Prep
After traveling all weekend + a missed flight to top it all off…let's just say I didn't have a chance to do my normal FriYAY grocery haul.
{𝘪𝘯𝘴𝘦𝘳𝘵 𝘨𝘳𝘰𝘤𝘦𝘳𝘺 𝘥𝘦𝘭𝘪𝘷𝘦𝘳𝘺 𝘰𝘯 𝘢 𝘔𝘰𝘯𝘥𝘢𝘺 𝘧𝘰𝘳 𝘵𝘩𝘦 𝘸𝘪𝘯!}
I knew I needed to go simple + quick this week, but also loaded with flavor bc who wants to eat boring health food?! Not me. I promise you this came together in less than 15 minutes and it's the kinda lunch you'll want to keep on rotation!

WHAT YOU NEED 👇🏼
Soyrizo (𝘪𝘵'𝘴 𝘴𝘰 𝘨𝘰𝘰𝘥, 𝘧𝘳𝘪𝘦𝘯𝘥𝘴! 𝘐 𝘧𝘪𝘯𝘥 𝘮𝘪𝘯𝘦 𝘢𝘵 𝘚𝘱𝘳𝘰𝘶𝘵𝘴 𝘰𝘳 𝘛𝘳𝘢𝘥𝘦𝘳 𝘑𝘰𝘦𝘴)
shredded lettuce
fresh pico (𝘐 𝘣𝘶𝘺 𝘢 𝘣𝘪𝘨 𝘤𝘰𝘯𝘵𝘢𝘪𝘯𝘦𝘳 𝘵𝘰 𝘶𝘴𝘦 𝘢𝘭𝘭 𝘸𝘦𝘦𝘬 𝘰𝘯 𝘦𝘨𝘨𝘴, 𝘵𝘢𝘤𝘰𝘴, 𝘦𝘵𝘤)
shredded cheddar cheese
greek yogurt
hot sauce
tortilla chips
avocado (𝘰𝘳 𝘺𝘰𝘶 𝘤𝘢𝘯 𝘣𝘶𝘺 𝘵𝘩𝘦 𝘴𝘪𝘯𝘨𝘭𝘦 𝘴𝘦𝘳𝘷𝘪𝘯𝘨 𝘨𝘶𝘢𝘤 𝘱𝘢𝘤𝘬𝘦𝘵𝘴 𝘵𝘰 𝘮𝘢𝘬𝘦 𝘭𝘪𝘧𝘦 𝘦𝘷𝘦𝘯 𝘦𝘢𝘴𝘪𝘦𝘳!)
***you can also add on corn salsa, pickled jalapenos, or whatever other taco toppings you can't live without***
HOW YOU MAKE IT 👇🏼
▪️Warm soyrizo over medium heat for 5 - 10 minutes. Chop/crumble it up the way you would taco meat as it's heating.
▪️While that cooks/cools, prepare your salads.
▪️Divide lettuce, pico, and cheese evenly between 4 lunch containers.
▪️Top with a dollop of greek yogurt + a drizzle of hot sauce.
▪️Once the soyrizo cools, divide evenly on top of the salads. Cover and store in the fridge.
▪️Prior to serving, top with mashed avocado or guac and crushed up tortilla chips!
