RECIPE OF THE WEEK || Black Bean, Corn, + Avocado Enchilada Bake

I realized this week that one of my FAVE recipes hasnโ€™t made itโ€™s way to the feed. UNACCEPTABLE. ๐Ÿ˜œ I love to make this one for dinner on Sundays and enjoy leftovers for either quick grab and go lunches OR a quick weeknight meal. Either way I know youโ€™re gonna LOVE this one. โฃ

WHAT YOU NEED ๐Ÿ‘‡๐Ÿผ

โ–ช๏ธ1 can black beans โฃโฃ, drained + rinsedโฃ

โ–ช๏ธ1 can corn, drainedโฃ

โ–ช๏ธ1/4 red onionโฃโฃโฃ, dicedโฃ

โ–ช๏ธcilantro, about 2 tbsp choppedโฃ

โ–ช๏ธ3-4 avocados โฃ

โ–ช๏ธlime (divided use) โฃ

โ–ช๏ธsalt + pepperโฃโฃโฃโฃ

โ–ช๏ธchili powder โฃโฃโฃโฃ

โ–ช๏ธcuman โฃ

โ–ช๏ธgarlic powderโฃ

โ–ช๏ธred pepper flakes โฃ

โ–ช๏ธ1 jar of your fave red enchilada sauceโฃ

โ–ช๏ธ8 corn tortillas โฃ

โ–ช๏ธshredded cheddar cheeseโฃ

โ–ช๏ธtoppings of choice (I love pico, greek yogurt, TJโ€™s jalapeรฑo sauce, + hot sauce or salsa) โฃโฃโฃโฃ

HOW YOU MAKE IT ๐Ÿ‘‡๐Ÿผ

โ‘  pre heat oven to 375โฃ

โ‘ก In a medium bowl add black beans, corn, red onion, and cilantro. Squeeze 1/2 a lime and add in salt/pepper to taste, 1 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, + 1/2 tsp red pepper flakes. Stir to combine and set aside. โฃ

โ‘ข In a small bowl, mash your avocados. Squeeze the other 1/2 of your lime and add in salt/pepper to taste, 1 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, + 1/2 tsp red pepper flakes. Stir to combine and set aside.โฃ

โ‘ฃ Begin assembling the casserole. At the bottom of your casserole dish add a small amount of enchilada sauce to coat the bottom. Place 4 of the tortillas as the base so they overlap (I tend to cut them so I make sure the dish is fully covered). Top with half of the remaining sauce. โฃ

โ‘ค Add 1/2 of the avocado and use a spatula to spread evenly. Top with 1/2 of the black bean mixture and a sprinkle of cheese. โฃ

โ‘ฅ Place the remaining 4 tortillas over the first layer and REPEAT with the remaining ingredients. Sauce. Avocado. Black Bean Mixture. Cheese. โฃ

โ‘ฆ Cover with foil and cook for 30 minutes. Remove foil and cook for 10 - 15 more minutes. If you want it extra bubbly you can broil at the end, too! โฃ
